Avocado Toast with Arugula

Servings: 2 slices of toast


Ingredients

  • 1 teaspoon lemon zest

  • 1 tablespoon fresh lemon juice

  • 1/2 teaspoon salt

  • 1/4 teaspoon pepper

  • 2 tablespoons extra-virgin olive oil

  • 1 ripe avocado

  • 1 teaspoon lemon zest

  • 1 tablespoon lemon juice

  • 1/2 teaspoon salt

  • 1/4 teaspoon red pepper flakes

  • 2 teaspoons extra-virgin olive oil

  • 2 slices multi-grain bread, toasted

  • 2 handfuls arugula

Directions


Vinaigrette: Whisk together all ingredients until emulsified.

Avocado mash: 1. Cut the avocado in half and remove the pit. Score each avocado half and scoop the

avocado out into a small bowl.

2. Add the lemon zest, lemon juice, salt, red pepper flakes, and olive oil, and mash together

with a fork.

3. Spread the avocado mash on the toast.

4. Toss arugula with the dressing and place on top of the avocado mash.
