4 cups carrots, peeled & diagonally sliced
3 tablespoons sugar
1 cup water
1 teaspoon salt
2 tablespoons butter
Salt & pepper (to taste)
2 tablespoons parsley, minced
1. In a medium sauté pan, combine the carrots, sugar, water, salt, and butter. Bring mixture to a boil, then reduce to a simmer over medium heat.
2. Cover and cook until dry (all liquid has evaporated) and glazed (shiny) – taste for texture and flavor.
3. Season with salt, pepper, and parsley
