3 tablespoons mayonnaise
1/2 tablespoon water
1/4 teaspoon salt
Juice of 1 lime
1/4 teaspoon lime zest
1 tablespoon cilantro, minced
1/3 cup red onion, minced
Pinch of black pepper
3 oz kale, de-stemmed and cut into bite-sized pieces
1 avocado, cut into 1" cubes
1 cucumber, cut into half-moon shapes
1. In a small bowl, whisk together mayonnaise, water, salt, lime juice, lime zest, cilantro and red onion. Add a pinch of black pepper.
2. Place the de-stemmed kale in a large bowl and toss with the above dressing. Cover and refrigerate for at least 1 hour.
3. When ready, remove the kale mixture from refrigerator and gently toss in the cubed avocado and sliced cucumber. Serve chilled.
