Tomato and Cucumber Salad with Parsley

Ingredients
6 tomatoes, diced (about 3 cups)
1 large cucumber, diced
1 teaspoon salt
1/2 cup fresh parsley leaves, chopped
2 tablespoons olive oil
2 teaspoons fresh lemon juice
1 teaspoon ground sumac
1/2 teaspoon ground pepper
Directions
1. Place tomatoes and cucumbers in a colander over a bowl or sink. Sprinkle with salt and leave to drain for 5 minutes.
2. Transfer tomatoes and cucumbers to a mixing bowl. Add the remaining ingredients and toss well to combine. Enjoy!
